Bread Machine (ode to)

Have I mentioned the bread machine lately? No? I probably need to. I love that thing. Pizza dough, yeah, but the sheer niftiness of being able to drop a bunch of water, some grease, flour, sugar, salt, and yeast in, and have a loaf of nice hot bread three hours later, is more than enough to send me dancing and perking about.

I made bread last night. I really do need to come up with a solution to the problem of what to do with a loaf of very hot bread, so that it will neither dry out nor become nasty and soggy.

Take out of the bread pan when it's cooled down enough to handle. Keep it on a cutting board (or a cooling rack if you've got one) covered lightly with a kitchen towel.

When completely cool, fit into a large ziploc bag and keep tightly closed.

Barring that you can find tupperware-esque containers that fit a loaf of bread (sitting upright as made in a bread machine) very nicely. You can scoot the bread out incrementally as you need to cut it and keep it airtight the rest of the time.

We use old gallon ice cream buckets. They work.

You know what I'm thinking about right now? Bread machine fruitcake.
