Finally, cheese is becoming safe for strict vegetarians.

In the interests of deep contemplation of cheese, I mentioned rennet casually. This proved to be an unpleasant surprise... it was just another little tidbit I thought that everyone knew.

Yes, knew 'bout that. I mostly ignore it. It may interest some people that Trader Joes makes animal-rennet-free cheese . . .

Kosher cheese is animal-rennet-free; has to be.

That makes sense. That would be a quite literal violation of that rule!

I wonder if in the future this becomes the standard way of making cheese. It sounds more efficient that the old way.

*shrugs* Could be. I don't think I'd really care either way, except for the ethical side of things. On the same note, I think I'll be happy with artificially-grown meat.

I might be happy with artificially grown meat after a tech generation or two or perfection. We'll have to see. I can be crazily old fashioned at times.
