The (latest) Casserole
In a casserole dish:
Bottom layer: cubed frozen potatoes
Season with Montreal steak seasoning, gently.
Next: frozen grilled chicken bits.
Season gently with taco seasoning.
Next: frozen mixed veg: broccoli, cauliflower, 2 kinds carrot.
Season gently with Montreal.
Next: moar potat. Season.
Optional: that baggie of caramelized onion from the bottom of the freezer.
Top with bacon grease.
Put in cold oven.
Bake at 375°F until steaming. Stir. Bake until the bottom potatoes are awesome.
Leftovers are excellent formed into patties and grilled in a panini squishini or something, but it's not quite cohesive enough for a waffle iron.
Top with a bit of sour cream.

I am reminded of this potato, bacon, and cheddar tart recipe. The fresh herbs really make it. I found it quite fussy to assemble, though, and the second time through, we just chopped everything up and made a casserole. Your recipe makes me realize I REALLY REALLY should have put a blob of sour cream on top!
