I didn't manage to get to sleep until late, alas.

I was resentfully awake at An Hour Of Morning, and Belovedest and I walked through the steps I'd laid out in the document for Doing Turkey. It helped so much.

Turkey safely roasting, I climbed back into bed, and while I didn't sleep as such, I did get some more rest, and Belovedest got started on Big Bad Daddy K's Sausage Stuffing (which we always prepare as a dressing, but the alliteration is necessary).

I gave bad advice about the square inch-age of the cornbread pan, resulting (as I would see later) in half-baked cornbread (but, gluten free!)

Belovedest also accomplished the tedious vegetable chopping. My sleepy instructions were also incomplete here, and they set the vegetables and chicken stock to simmering in an uncovered sauté pan instead of a deep (and lidded) sauce or soup pan. THINGS WE LEARN TO SPECIFY FOR THE DOCUMENT.

I suggested starting the sausage next, when they popped in to ask about the tenderness of the vegetables. They transferred the vegetable mix into the pot I would have thought of, and started the sausage in the other pan.

I wandered out, looked admiringly at the cornbread in passing, and thought about starting the Brazilian cheese breads (gluten free!) and then flipped over a likely-looking crumb.

THE CORNBREAD GLISTENED.

(Cornbread, fully cooked, isn't supposed to glisten. Not like that.)

I made Noises of Distress and re-warmed the oven. I eventually realized that this is down to my bad advice about the pan size.

The turkey, by this time, had collapsed. "It's trying to spatchcock itself!" I explained, and turned it down to the Keep Warm setting on the roaster. "It's literally falling off the bone," Belovedest observed. (Yum. Also, oops.)

Eventually the cornbread finished, and we assembled the stuffing, and now it is done and warm, the biscuits are done and warm, the cheese breads are done and warm, the asparagus is in the oven, and Belovedest is putting together the tiered tray that I was thinking about for the cheeses. And we should heat up the gravy.
